Crafted with Tradition – Taste the Difference of a Handmade Salsa

There’s no better way to experience true Mexican flavor than by preparing salsa the traditional way— with a molcajete. This volcanic stone tool has been used for generations to create rich, deep flavors that a blender simply can’t replicate. The grinding process releases essential oils, enhancing every ingredient for an unmatched taste and texture.

Ingredients:

20 arbol chiles
6 tomatillos
1 Roma tomato (red)
¼ teaspoon salt (or to taste)
10 sprigs of cilantro (remove excess stems)
1 garlic clove
Water (as needed)

instructions:

Ingredient Preparation: Wash all ingredients thoroughly and remove the husks from the tomatillos.

Toasting the Chiles: On a heated comal or skillet over low heat, toast the arbol chiles, stirring constantly to prevent burning, as burnt chiles can become bitter. Once toasted, remove from heat, take off the stems, and keep the seeds.

2Roasting the Tomatillos and Tomato: Place the tomatillos and the tomato on the comal with the stem side down, as this part is the toughest. After a few minutes, wrap them in aluminum foil to trap steam and help them soften evenly. If you prefer not to use foil, cover them with a lid instead—this will achieve the same effect. Roast until the skin is well charred and the flesh is tender.

Grinding in the Molcajete – The Secret to an Authentic Salsa:

  1. Start by grinding the toasted chiles in the molcajete along with the garlic clove. If needed, add two tablespoons of water to ease the process (remember, dried chiles require a little moisture, but don’t add too much, as the tomatillos will release their juices).
  2. Add the fresh cilantro and continue crushing until well incorporated.
  3. Gradually add the tomatillos and tomato, one or two at a time, crushing and mixing them into a smooth or chunky consistency—whatever you prefer. The molcajete naturally enhances the flavors, creating a salsa with depth and character.
  4. Adjusting Texture and Flavor: If you prefer a thinner salsa, you can add a bit more water. Taste and adjust the salt as needed.
  5. Enjoy Your Salsa! Serve your Authentic Molcajete Salsa Roja with your favorite dishes. From tacos to grilled meats, this salsa brings out the best in every meal.

I’ve always been a dreamer, someone who creates big dreams in her heart. But for a long time, I didn’t have the courage to speak them out loud. That’s something I’m ready to change. Not just for me, but to grow as a woman, a creator, and most importantly a mother. I want to show my two little ones that no matter what challenges we face, we can be brave, we can be entrepreneurs, and we don’t have to let fear or the opinions of others hold us back. And I couldn’t do this alone. My husband has been by my side every step of the way, believing in this vision just as much as I do. His support, dedication, and shared love for our roots give me strength every single day. Casa de Molcajetes is a family effort, and it means everything to be building it together. Casa de Molcajetes is my way of showing them that our culture matters. That tradition matters. That where we come from is something to be proud of. This brand is a tribute to my Mexican roots and to the generations who came before me. Through this business, I get to teach my kids where I come from and share a part of that with families who may not know the richness of our traditions. My grandfather taught my father and uncles the art of lapidary , a treasured, skilled tradition of shaping volcanic stone by hand. With that technique, they created molcajetes, metates, and beautiful figures that told stories of our land, our food, and our people. Our hometown is over 450 years old, and to this day, dozens of artisans still shape molcajetes by hand to support their families. This is the legacy I come from. This is the tradition I hope to keep alive. Casa de Molcajetes isn’t just about selling stone tools, it’s about honoring a culture, and passing down pride, identity, and love… one molcajete at a time. Thank you for being part of this journey. Thank you for supporting something that comes from the heart. Con mucho cariño, Angelica Angeles Founder, Casa de Molcajetes
